From looking at a couple of other recipes around the Internet, I've distilled the basic ratio to 2 slices of bread to one egg, to 100ml of milk, to 2/3 tablespoon sugar. So, if you have 6 slices of bread, that's 3 eggs, 300ml of milk and 2 tablespoons of sugar

  • 6 slices of bread
  • 3 eggs
  • 300ml of milk
  • 2 teaspoons of vanilla essence
  • 20g sultanas
  • 2 tablespoons sugar + extra for sprinkling
  • cinnamon
  • butter


  1. Butter bread on both sides and sprinkle lightly with sugar.
  2. Cut bread into triangles.
  3. Grease a baking dish and arrange bread in the dish, sprinkle saltanas between the slices.
  4. Disolve sugar in milk and combine with eggs and vanilla.
  5. Pour the egg mixture over the bread, taking care to moisten all the bread.
  6. Sprinkle sugar and cinnamon over the pudding and set aside for 30min
  7. Place dish in a tray of water and bake at 180 degrees Celsius for 30-40min (always takes me longer) or until custard is set and pudding is browned
