  • 250 g butternut biscuits
  • 125 g butter, melted
  • 375 g cream cheese, softened
  • Zest of 1 lemon
  • 2 teaspoons vanilla essence
  • 1/3 cup lemon juice
  • 1 x 400 g tin condensed milk


  1. Process biscuits until finely crushed. Add butter and mix well.
  2. Press half of the biscuit mixture into the base of a greased and lined 20 cm springform tin.
  3. Use a glass or spoon to push the remainder of the mixture around the sides of the tin.
  4. Refrigerate for 15 minutes.
  5. Beat the cream cheese until smooth and creamy.
  6. Add lemon zest and vanilla and beat well.
  7. Gradually add the condensed milk, and continue to beat until smooth.
  8. Gradually add the lemon juice, and continue to beat until just smooth. (apparently the sour lemon juice sets it)
  9. Pour into the prepared tin and refrigerate overnight.
