Ingredients

  • 1 Whole chicken
  • 1 Lemon
  • Salt and peper

Method

  1. Preheat oven to 175c
  2. Wash chicken inside and out. You should be able to feel the chicken's ribs from the inside. If you can't, there may still be some offal inside, so scrape it out and wash the chicken thoroughly. Once washed, dry it (inside and out) with paper towels
  3. Wash the lemon (remove any stickers) and pierce it with a fork at least 12 times
  4. Insert the lemon into the chicken's cavity and seal the hole, using a toothpick (or two)
  5. Rub salt and pepper into the chicken's skin then, with some cotton thread, tie its ankles together and tie another loop around the bird to keep its wings close to its body.
  6. Place the chicken on its stomach in a baking dish and place in the oven for 30min
  7. Turn chicken and bake for a futher 30min
  8. Increase the temperature to 200c and bake until chicken is well browned (usually between 20 and 40min)
